Chef-patron, Mark Vaughan, opened his water front Bistro, specialising in European and Seafood cuisine, in 2005 after having run a successful restaurant in nearby Portland for 5 years.

Mark is passionate about food and tries to source as many of his ingredients locally where possible. 

In 2006 he became a member of the Guild of Master Chefs, a position only open to chefs who can demonstrate that they are at the top of their profession.

Vaughan's is open for lunch and evening meals Tuesday to Saturday as well as for Sunday lunch, and offers daily fish specials - often using fresh fish landed that day by local fishermen.

Whilst the Bistro can comfortably accommodate up to 100 people, having an upstairs section as well as downstairs, the careful placing of tables and interior decoration creates a warm, welcoming atmosphere for any number of diners.

Mark and his team were also proud to welcome Barbara Windsor and Samantha Janus to the Bistro when episodes of 'Eastenders' were recently filmed in Weymouth.
